In this talk, I will discuss recent experimental quantum simulations based on trapped-ion and cold-atom devices, which have motivated recent theoretical studies of low-dimensional lattice field theories, both with local and global symmetries, which unveil various aspects of non-perturbative solitons. I will show how these solitons become manifest at finite densities, and are responsible for new ordered phases at finite densities, or through real-time dynamics, allowing to explore the localization of fractional charges.
