 M-CSIC)\nIn this talk\, I will discuss recent experimental quantum simulat
 ions based on trapped-ion and cold-atom devices\,  which have motivated re
 cent theoretical studies of low-dimensional lattice field theories\, both 
 with local and global symmetries\, which unveil various aspects of non-per
 turbative solitons. I will show how these solitons become manifest at fini
 te densities\, and are responsible for new ordered phases at finite densit
 ies\, or through real-time dynamics\, allowing to explore the localization
