With the large datasets collected by the LHCb experiment, the production and decay of heavy baryons can now be studied with unprecedented
precision. Recent measurements of charm and beauty baryons at LHCb provide stringent tests of the Standard Model and valuable input for QCD models. In this talk, I will present a polarimetry analysis of the Ξc⁺ → Ξ⁻π⁺π⁺ decay, the "golden mode" of the Ξc⁺ baryon, using LHCb Run 2 data. By exploiting the subsequent cascade of weak decays Ξ⁻ → Λπ⁻ and Λ → pπ⁻, a model-independent amplitude analysis allows a simultaneous measurements of the polarization and the effective parity-violating decay
parameters. These results are a key ingredient for two future measurements: the electric and magnetic dipole moments of the strange Λ baryon at LHCb, and those of charm baryons at ALADDIN, a dedicated fixed-target experiment at the LHC in which bent crystals make the baryon spin precess.
